This week two days of salad eating were accomplished a la Cafe Rio. Monday's was just so satisfyingly delicious that I craved it every day after. It's that tomatillo dressing. I tell ya...Post to come soon on easy salad making tips.

I recognized Cafe Rio Salad before you even said it. My vote this week if for Thursday's salad. Yum!
